Healthy banana muffins aren't always easy to find but this 5 ingredient 1 bowl recipe will having you anxiously waiting for those bananas to ripen!

Sundays and Mondays are my favourite days to meal prep, bake and get us organized for our week ahead. I like to ensure my meals and grocery shopping is all taken care of and all my baking is done for our week ahead.

One of my go to, must make each week is our...5 ingredient 1 bowl Banana Muffins!!

Muffins are a staple in our house! Although, I think I eat the majority of them, as they are an easy to grab snack while I'm nursing or on the go!!

The hardest part is finding a recipe that's not full of butter and sugar but still tastes delicious!! I have a devoted Pinterest board to "Muffins" which is home to over 160 different muffin recipes! I have tried so many and they are either too hard...boring...too many weird ingredients...unhealthy...the list goes on.

And then one amazing Sunday, while spending way too much time on Pinterest, I came across a recipe which I have adapted it to make our favourite banana muffins! This recipe is delicious and easy to make that we have to double the recipe each time. The hardest part is waiting for the bananas to ripen fast enough!

5 Ingredient 1 Bowl Banana Muffins

Prep Time: 5 mins

Bake Time: 15 minutes

Yields: 24 mini muffins or 12 regular size muffins

Ingredients:

1 cup of flour (we use spelt but we've tried oat flour too)

1/4 cup of oil (melted coconut oil or vegetable oil)

2 mashed bananas (the more ripe the better)

1/4 cup of coconut sugar

2 eggs

1 tsp baking soda

Dash of cinnamon (optional)

Mix-ins (optional): blueberries, chocolate chips, pumpkin seeds are just some ideas

Instructions:

Step 1

Preheat the oven to 350F and spray muffin tins (We use the Trader Joe's Coconut Spray).

Step 2

Put all the ingredients into the bowl in the order you see.

Step 3

Mix the ingredients together but be careful not to over mix!

Step 4

Fill the muffin tins 2/3 full with the batter.

Step 5

Place in the oven for 10-15 minutes. Use a toothpick and make sure it comes out clean!

Step 6

Let cool and enjoy!

These can be placed in an air tight container and lasts 3-5 days. I also divide the muffins in half and freeze the second half in a freezer container for the rest of the week or the following week!
