We have to admit that when fall and winter hit, it's hard to indulge in salads every day but as soon as the summer weather heats up, its all we want to eat!!
Our mom is a salad master!!! She has perfected a healthy west coast salad and it's a summer must eat at every family dinner!
Although, we are not quite at salad master level, we have created a few of our very own favourite salads!! We try and source as much local and organic ingredients possible. Another bonus, is when the kids like them. Grayson is quite the salad fan and loves adding hard boiled eggs to his!
We are blessed to have healthy, non-picky kids!!
Here are some of our favourites this summer:
Lettuce Wraps
Being vegetarian means we usually miss out on Chinese lettuce wraps which is why we created my own vegetarian option! These are pieces of organic romaine lettuce hearts, boiled organic brown rice noodles, heated vegetarian ground round and topped with a local hosein sauce!! Simply light and delicious!

Buffalo Cauliflower Wraps
This was a crowd pleaser! Local romaine lettuce with roasted local cauliflower and tofu that was tossed in a buffalo sauce and topped with a blue cheese dressing! You could wrap it up in a whole wheat wrap or eat it on its own in bowl!

Falafel salad (with or without pita!)
This falafel salad has local romaine lettuce, local cucumbers, local peppers, tzatziki, hummus all on a pita or a bowl, topped with homemade lentil protein balls! These protein balls are amazing and I keep them in my freezer for an easy protein to add to salad, pasta or Buddha type bowls!

Fresh summer salad
This salad was amazing!! There's local romaine (no spray) lettuce, local blueberries, local farm fresh eggs and then some avocado, quinoa and roasted sweet potatoes! So easy, nutritious and delicious!!

Vegetarian Taco Salad
Veggie ground round, romaine lettuce, avocado, salsa, grated cheese and crushed tortilla chips!
